This turkey soup recipe has a divine Asian flare. It is a great way to use up the post Thanksgiving leftovers. |

wide rice noodles (or your favorite noodle) |
|
1-2 cups |
|
boiling water to cover the noodles |
|
6 cups |
|
turkey (or chicken) broth |
|
1/2 cup |
|
scallions, thinly chopped |
|
6 slices |
|
ginger, peeled |
|
2 Tbs |
|
fish sauce (or soy sauce) |
|
2 cups |
|
turkey, diced (or chicken) |
|
Garnishes |
|
|
|
bean sprouts |
|
|
|
fresh mint leaves |
|
|
|
lime wedges |
|
|
|
sliced serrano chilies |

Place rice noodles in a bowl, add enough boiling water to cover. Let rice noodles stand for 5 minutes, drain, set aside. |

Combine broth, fish sauce (or soy sauce), ginger, garlic in a large pot. |

Bring to a boil, lower heat and simmer 15 minutes. |

Remove ginger from broth and discard. |

Add turkey (or chicken) and noodles. |

Add scallions, stir to heat through. |

Ladle into bowls, and serve with your favorite garnishes as desired. |
