This flavorful spaghetti squash recipe is an excellent healthy substitute for regular pasta. It's delicious and only a fraction of the calories and carbs. |

spaghetti squash |

fat-free butter flavored cooking spray |
|
4 Tbs |
|
garlic, minced |
|
1 cup |
|
green onions, chopped |
|
1 cup |
|
fresh parsley, chopped |
|
2 Tbs |
|
lemon juice |
|
1/4 cup |
|
grated parmesan cheese |

Pre-heat oven to 350 degrees F. |

Prick spaghetti squash with a fork all over. |

Place squash in a baking dish and bake for approximately 60 minutes or until tender. |

Remove squash from oven and cut in half . |

After cool, remove seeds and scoop out flesh into a medium bowl separating into spaghetti-like strands with a fork |

Spray skillet with fat-free butter flavored cooking spray. |

Saute green onions and garlic for about 3 minutes, stirring lightly. |

Add squash and stir fry 3 to 5 minutes or until heated through. |

Stir in parsley and lemon juice. Mix well. |

Add parmesan cheese and toss to coat. |
