Cucumber Salsa Recipe
Radish and Cucumber Salsa

This salsa recipe is excellent with hot spicy foods. Try with the Blackened Tilapia. |

cucumber, chopped |
|
1/2 medium |

sweet red pepper, chopped |
|

scallions, sliced |
|
1 Tbs |
|
cilantro, chopped |
|
2 Tbs |
|
fresh lime juice (about 1 medium lime - juiced) |

olive oil |

salt and pepper to taste |

Slice each radish in half and then thinly slice each half into 1/2 moons. |

Combine cucumber, radishes, red pepper, scallions, cilantro, lime juice, and olive oil into a medium bowl and toss. |
