Salmon with Cucumber-Horseradish Sauce

This salmon recipe has a wonderful sauce that is a delight to the taste buds! |

4 fillets |
|
salmon (approximately 4 oz each) |
|
1/3 cup |
|
finely chopped cucumber |
|
2 tbs |
|
nonfat mayonnaise |
|
2 tbs |
|
nonfat yogurt |
|
1 tbs |
|
Benecol or Take Control margarine, melted |
|
1 tsp |
|
snipped fresh dill or 1/4 teaspoon dried dill weed |
|

cucumber slices, halved (optional) |
|
|
|
fresh dill (optional) |

For sauce, in a small bowl combine cucmber, mayonnaise, yogurt, and horseradish. Cover and chill until serving time. |

Combine margarine and dill and set aside. |

Place salmon on a greased rack of grill. Brush occaisionally with margarine mixture. Cooks quickly, so keep an eye on fish. Fish is done when it is flaky. |

Garnish if desired with cucumber slices and fress dill. |
