Potato Soup

 
 
This potato soup recipe is easy to make with frozen hash browns. No potatoes to peel! Serve with your favorite garnishes, such as chopped scallions, low-fat cheddar cheese, or bacon bits.
 
1/3 cup    onions, chopped  
26 oz    frozen shredded hash browns  
60 oz    fat-free chicken broth  
8 servings    fat-free country gravy mix (1 large pkg or 2 small pkgs)  
 

1 Add 1 cup chicken broth to soup pan.
2 Add chopped onion to broth and saute until tender.
3 Add gravy mix to onions and broth and blend.
4 Add remaining ingredients.
5 Simmer for about 10 - 15 minutes.

Preparation time: 5 minutes
Cooking time: 15 minutes
Ready in: 20 minutes
