This light non-alcoholic eggnog recipe is reduced in fat, cholesterol, and calories, yet tastes great. Give it a try! |

6 cups |
|
skim milk |
|
1 cup |
|
Egg Beaters (or comparable product) |
|
6 packets |
|
non-caloric sweetener |
|
2 tsp |
|
real vanilla extract |
|
2 tsp |
|
rum extract |
|
sprinkle as desired |
|
pumpkin spice |
|
|

Beat half (3 cups) of skim milk, Egg Beaters, and sweetener in a saucepan. |

On low heat, cook until mixture is thick and thinly coats a spoon. |

Make sure to stir constantly. |

Remove from heat and stir in remaining half (3 cups) of skim milk, vanilla, and rum extract. |

Cover and chill in refrigerator overnight. |

Serve with a sprinkling of pumpkin spice on the top. |
