Cucumber Salad

 
 
This cucumber salad recipe is always great to serve at picnics. Because it is low in calories, you can offset some of the richer foods on the table by including it!
 
2 cups    thinly sliced cucumbers  
1 cup    large onion, thinly sliced, and separated into rings  
2 Tbs    water  
2 Tbs    vinegar  
  freshly ground black pepper to taste  
  salt to taste  
 

1 If the cucumbers are waxed, peel them before slicing. If they are not waxed and are chemical-free, leave the skin on. With a fork, score the sides of each cucumber, creating a ruffled edge. Slice thinly.
2 Slice onions thinly.
3 Layer the sliced cucumbers and onion in a large bowl.
4 Combine water and vinegar and pour over the cucumbers.
5 Salt and pepper to taste.
6 Chill and serve.
